I made a triple batch of the following homemade vinagrette (adjust according to the amount of chicken):

3 tbsp balsamic vinegar

1 tsp brown mustard

5 tbsp extra virgin olive oil

some salt and pepper

Coat chicken and let it “marinade” for a bit – or even coat and cook immediately that works too.  Put it on the grill (or in the oven at 400 degrees if outdoor cooking isn’t possible).   Indirect heat for cooking the chicken for about 20 minutes – depending on the size of the pieces.  Direct heat at the end to crisp it… it’s wonderful.  No basting – oh so yummy.

I prefer chicken thighs and yes I leave the skin on – can’t stand dried out chicken.

With breast meat you’ll have to up the time.  With drumsticks – less required.  I have also used this to marinade chicken wings and bake at 450 topped with shredded Parmesan cheese – wonderful stuff.

Oh I can nearly write that one myself, but decided to check it out anyway.

Of course, most people understand why they shouldn’t eat potato salad that has been left in the sun for six hours. That’s a well-known recipe for food poisoning. But some remain shockingly unsure of certain threats. Alonso says she has been asked if it’s safe to eat roasted turkey kept in the refrigerator for three months.

I have to wonder, if someone really did call to ask that question AND they were serious… how in the world did they live long enough to learn to dial the phone much less get to a point in their lives where they could cook turkey?  For that matter why would they bother cooking the turkey as they seem to be ready to eat just about anything.

Then again…

Susan Reef, president of US Food Safety Corp., which runs a commercial website (usfoodsafety.com), says one frugal reader asked if it would be OK to finish the gourmet coffee drink left on her desk overnight.

The fact that they’ve survived this long must put them into the “super digestive” category.

Digestive systems able to leap bad food in a single bound.  It’s Super Stomach!

My favorite food in the world.  Dark Chocolate.  Not the plastic candy bars in the store, but the real deal 70%+ cocao.

Divine stuff.

Apparently in hard economic times, chocolate doesn’t sell so well!  Who knew!

Bitter times for chocolate

“The global chocolate market continues to decline in volume terms because consumer sentiment is still worsening in most economies,” said Victor Balli, the group’s chief financial officer said.

This can NOT be good. It could result in the disappearance of good chocolate and that would be a shame. Therefore, your assignment this week is to get out there and buy some good chocolate.  If we all pitch in and buy a little, it will add up.  Now get to it!

Bomb Squad Detonates Suspicious Item, Discovers Fruit

It’s only been a short while since Flight 447 was lost.  I think that might have the TSA a bit jumpy (or it could be they are like that all the time).

The X-ray equipment used by TSA airport security in Columbus could not detect what was inside a sealed canister in a bag being inspected around 7 p.m. Tuesday. The container was labeled “baby food,” but authorities said security personnel became suspicious when the woman who owned the suitcase claimed the canister held pickles.

The fire department bomb squad removed the item from the airport and detonated it, discovering the mangoes.

Pickles, mangoes, baby food…it’s all mush now.

Study: Olive oil touted as natural pain reliever

New research shows olive oil contains an anti-inflammatory ingredient similar to that of some common painkillers, but could it replace your meds the next time you get a headache?

According to a study in the journal Nature, researchers have found a previously unknown compound in extra-virgin olive oil that they say acts in a manner similar to nonsteroidal anti-inflammatory drugs (NSAIDs) such as aspirin and ibuprofen. They call this ingredient oleocanthal.

Okay, I’ve been using Extra Virgin Olive Oil for years in my cooking.  I LOVE the stuff.  There are very few things I cook that require some other milder form of vegetable oil.  And I get migraines.

I can tell you right now, olive oil never helped me with my migraines even once.  And if it is supposed to help on a general basis with other types of pain, I haven’t noticed it. But hey, if I can make myself believe it, maybe all I have to do is think about the oleocanthal when I hurt and all the pain will go away.

Or not.

You see, three days a week I have pilates classes.  The other 2 days I head to a local fitness center and try to at least squeeze in 2 miles walking on the treadmill.  When I’m at the fitness center, there are several televisions.  I never watch them, I bring my ipod and listen either to podcasts or audio books while walking. (I try to get a treadmill in front of the windows so I can look outside).

Now it has happened often enough, that I am beginning to wonder about this odd thing I see.  Women will come into the fitness center, take a treadmill near mine, ask if I’m watching the television.  I tell them “no, go ahead and watch what you want”.  And they turn on The Food Network!

First let’s give credit where due, these women (I have never seen a man do this, but maybe I’m there at the wrong time of day) are there at least walking the treadmill.  They could be home sitting on the sofa watching, but they are up moving. All but one of these women has been up in the plus sizes.  Leading me to believe they are there trying to exercise in an effort to lose weight.  I might be wrong about that.

However, if you are trying to lose weight, isn’t it counterproductive to watch cooking shows?  I watch them once in a while, but as they tend to feature mega calorie recipes that would be tasty, but significantly bad for my health, I don’t watch too many of them. And quite honestly, I don’t want to be looking at food while exercising – even though these are “lite” exercise days.  Makes me a bit queasy.

It seems that I might be in the minority on this issue.  I found this article today…

Will run for food

The gym I go to is trying to do me in. They took away the Food Network.

On every treadmill and cross trainer with a little television attached to it, you used to be able to pound your heart out while watching some foodie mix up an Italian dish with enough fat grams to take you through the middle of next week.

Even though she claims she’s alone, I can tell her that she certainly is not.  And I just don’t get it.  So perhaps I’m missing something.

Also today found this article about a diner with a specialty that leaves me rather stunned.

The motto of the Nickel Dineris probably Home of the Maple Glaze Bacon Donut, a slogan inscribed both on the home page of its Web site and in the arteries of its best customers.

Okay, I like donuts and I like bacon. Give me either one separately…  But please please don’t put them together.  Yes, I am definitely missing something.

Tonight will be an odd food night.  I will be throwing together a salad, but we have lots of cheese, crackers, hummus, and other snacky like things.  PLUS a bottle of Champagne!  Therefore, today’s dinner will consist of a little bit of all these things.  Because otherwise they will go to waste since we don’t do much snacking here.

And really Champagne just requires cheese and crackers to go along with it now doesn’t it.  By the time we get done with all that, it will more than compensate for a real cooked meal I think.

Wayward cows decide to abandon Massachusetts farm and walk at least 5 miles to New Hampshire

People up here really love their ice cream, so I’m sure the fact that 2 cows were trying to escape induced major panic in the local population.

One of the adolescent heifers was finally captured, found up to her neck in mud.

I’ve got to think that is a bit of hyperbole.  Even with all the rain we’ve had lately.  But maybe not.  There is still one cow on the lam.  I wonder where she’s hiding.

If you haven’t heard, there’s a new movie out. I stumbled across it when browsing the news feeds looking for blog fodder. (apparently I have found some fodder as I’m blogging it). This movie is called “Food, Inc”,  the latest effort to gross out the American Public and try to convince them that the food they eat is going to kill them. The critics (all well fed and happy little campers I’m sure) are raving about the wonderfulness of this message. The claim is you won’t be able to eat anything from supermarket shelves after watching this.

Right. Whatever.

I was sufficiently amused to discover the do-gooders are out there with keyboards blazing telling us we should heed the “central message” of this thought provoking piece of celluloid.  After all, Hollywood knows best!

Ever wonder what astronauts eat?  I remember when I was a kid and the moon mission was the talk of the world.  This was a question that was often raised.   Tang was billed as the drink of astronauts back then when NASA decided to use it on Gemini flights.    At one point I remember someone bringing freeze dried ice cream to school for some sort of demo and we all got to try some.  We were told the astronauts were eating this too.

But what does NASA say?  They are sending quite a few missions to near space and the space station.  Well, they have a website.

Space Food.

Astronauts eat three meals a day – breakfast, lunch and dinner. Nutritionists ensure the food they eat provides them with a balanced supply of vitamins and minerals. Calorie requirements differ for astronauts. For instance, a small woman would require only about 1,900 calories a day, while a large man would require about 3,200 calories. There are also many types of foods an astronaut can choose from such as fruits, nuts, peanut butter, chicken, beef, seafood, candy, brownies, etc… Drinks range from coffee, tea, orange juice, fruit punches and lemonade.

Not too bad.  Although I’m guessing it’s much like MRE’s – it will get you through the day, but don’t count on too much by way of haute cuisine.  On the site they also have links to videos of eating in space and why they like tortillas.

So head over and have a little fun reading.  Then go eat some real food and be happy it’s not all freeze dried.
