Can we really make pasta healthy?
With all of this in mind, I have been working on developing a fresh sourdough pasta recipe that relies on a wild lactic fermentation to make it safe and nourishing while also retaining the delicious flavor and texture that we all love in fresh pasta. The result of this most recent attempt is something I am proud to feed my family.
