About Bill

Dr. Bill Schindler is a food archaeologist, primitive technologist and chef. He travels the world with his family documenting traditional food ways and works to draw inspiration from the deep archaeological record, rich and diverse ethnographic record and modern culinary world to create food solutions that are relevant, meaningful and accessible in our modern lives. He shares all these stories in his book, Eat Like a Human, and puts the recipes into practice at his family’s Modern Stone Age Kitchen in Chestertown, Maryland.

Join Archaeologist-Chef Dr. Bill Schindler, Founder and Director of the Eastern Shore Food Lab, on a foray of Capitol Hill to forage for food! Washington’s lawns, parks and alleys are full of good things to eat, if you know how and where to look.

Bill Schindler is the Director of the Eastern Shore Food Lab and Associate Professor of Anthropology at Washington College in Chestertown, MD. He is a specialist in primitive technologies who lives his work. He was the star of National Geographic’s acclaimed series The Great Human Race.

You will very likely find lambs quarters, purslane, chickweed, poke, Japanese knotweed and other treasures often invisible to the untrained eye. While the final menu has yet to be determined, here is a sample menu from previous years:

  • Roasted Marrow Bones with a Wild Bitter Green Salad
  • Wild Spring Greens Casserole
  • Pesto of Wild Greens
  • Sourdough bread (fermented and baked by Dr. Schindler)
  • Wild Ice Cream
