When it comes to food and diets, the world has become a very complicated place to live in. As a New Zealand family recently move to the United States, we didn’t realize how spoiled we had been with the access we had to ruminant animals straight off the family farm. Knowing where our food came from and the process it took to reach our plates actually meant a lot to us. A butchery course for the family to understand how we can eat nose to tail was the perfect approach to build on our curiosity whilst learning some new skills, and getting some great food in the process!
Bill’s instruction is clear and punctuated with his vast knowledge of the ‘why’ when it comes to his approach to animals within the human diet. Having listened to several of his podcasts it was great to build on this knowledge and his approach to nutrition. We let our kids do the majority of the butchery as we sat back and took in the information which flowed throughout the day.
This day achieved so many things. Firstly meeting Dr Bill and his family was an absolute privilege. They are great people and we felt so welcome. Next, we sparked some interest in our children, who are now adamant they want to go hunting and make their own sausages (the sausage stuffer is on order already).
We gained so much knowledge from the day and it has shaped the way we look at how we eat and obtain our food. We are realistic about how we go about changing, but it gave us the boost we needed to make some real changes in the way we approached food.
Would I recommend doing this course? Absolutely. This is an experience and an education all rolled into a butchery course – and the sausages are brilliant.

“Taking a class with Dr. Bill Schindler is journeying through time, continents and cultures to learn from our ancestors and our fellow humans in order to better ourselves. I attended my first class shortly after the onset of debilitating postpartum back and neck pain. My doctor recommended that I follow the Paleo Autoimmune Protocol to help manage the inflammation of my muscles. There were striking similarities between what I learned from Dr. Bill and what I was learning about food, digestion and inflammation from my physician. I shared my learnings with my husband, and he became curious, too. We inherited a sourdough mother from a friend, and began making sourdough pizza. Then we tackled sandwich bread with Dr. Bill’s recipe. Dr. Bill’s classes don’t overwhelm you with knowledge, or leave you swimming in despair regarding the food and health crisis our nation faces; they equip you with the tools to be an active participant in the solution. A few days ago, I attended a class about making fermented cheeses. I left with two recipes, a list of resources (where to buy ingredients and additional tools I might need), and the skill to replicate at home. Just a few days later and we are able to make our own pizza cheese to top our sourdough crust, homemade pizza sauce and venison sausage (that my husband killed and butchered). None of this would have happened without Dr. Bill and his family. Moreover, I took Christina’s advice and stopped buying the junk. You know, the veggie straws, pouch applesauce, fruit snacks and goldfish shaped cheese crackers that all mothers of a two and five year old have. I got a dehydrator for Christmas. My kids now snack on dried apples, fruit leather and sourdough crackers. When I open my pantry or pack a school lunch, I feel good instead of guilty. It takes time, commitment, and quite frankly, a village to eat like a human again. With Dr. Bill and his family as a part of your village, a little self-love and patience, it is totally attainable. The best part is that I am still learning! I can’t wait to learn more about eating and cooking offal, curing meat and making kefir! Eastern Shore Food Lab Class Cancellation Policy
At the Eastern Shore Food Lab, we strive to provide a personalized and engaging experience through our small class sizes. Due to the intimate nature of our classes and the commitment required to prepare for each session, we have implemented the following cancellation policy:
Cancellation and Refund Policy:
Cancellation by Participant:
- Notice Given 14 Days or More Before Class Date: If you need to cancel your reservation, please notify us at least 14 days before the scheduled class date. We will make every effort to fill your spot. If we are able to do so, you will receive a full refund.
- Notice Given Less Than 14 Days Before Class Date: Cancellations made less than 14 days before the class date are not eligible for a refund unless we are able to fill your spot. If the spot is filled, you will receive a full refund.
Cancellation by Eastern Shore Food Lab:
- In the rare event that we need to cancel a class, you will be notified as soon as possible, and you will receive a full refund or the option to transfer your registration to another class of equal value.
